Blue Mountain Bistro Catering Co. specializes in Mediterranean cuisine, from festive Spanish style tapas to rustic Provencal country dinners. Since 1983, chef Richard Erickson's cuisine has garnered praise from many local and national magazines including Gourmet. In 1985 while he was chef of Bistro du Nord in NYC, it was named "Best Bistro" by Gael Greene in New York Magazine. In 1993 after opening Blue Mountain Bistro in Woodstock, he was awarded Four Stars by critics from Albany to Westchester. Richard has been cooking with the best local produce since he was chef at Metropolis Cafe on Union Square in NYC next to the Greenmarket.
